I tried this yesterday with great results. Followed the recipe exactly not normal for me! This worked very well, and tasted even better than I remembered. The texture was much lighter than the dense stuff from the can, but the flavor was similar. I toasted the walnuts before using and they retained their crunch, giving a nice contrast to the soft, moist bread. Next time I may reduce the temperature by a few degrees or use a different pan because the outside gets done before the middle if you're not careful. I did tent it at 30 minutes and cooked for 45 total, but there were some soft spots that were a little on the gooey side. Be sure to chop your dates small to avoid this as they can form soft pockets in the cooked bread. I used the coffee and the flavor of the dates still comes through. I was going for more traditional date nut bread this time. I may experiment with using orange juice and orange zest in the future instead of the coffee and maybe Cointreau for the liquor for a twist on the flavor. I think the zing of the orange will compliment the sweet of the dates nicely, but that is for another day. I finished the creation with some home made mascarpone cheese, using lemon as the coagulant, and it came out tasting like lemon cheesecake. It was the perfect complement for the date nut bread, spreading more easily than cream cheese. This is the very best date nut bread ever, and I have been baking for more than 50 years! I used boiling water instead of coffee and added the lemon juice as suggested. I baked in the KA mini-loaf pans and the result is fantastic! Light texture, loads of flavor I added a little cardamom. Definitely plan to make again for future gatherings or if I just happen to have dates on hand. These sweet, luscious dates on the vine were piece for snacking, but how else could I get creative with them.
